Spicy spinach soup with cupboard ingredients

Ingredients: (2 servings)

  • 2 shallots
  • 2 cloves garlic
  • 1/2 red chilli (seeds removed)
  • 1/2 tsp curry powder
  • 1/4 tsp cayenne pepper
  • 1/4 tsp ground cumin
  • 1 tbsp olive oil
  • 250 grams spinach (fresh of frozen)
  • 200 ml coconut milk
  • salt and pepper to taste
  • some watercress and pine nuts for garnish. 

Instructions: 

Roughly shop the onion and garlic and chilli. Sauté the onion, garlic and chilli together with the spices in the oil in a thick bottomed pan. Turn down to the lowest heat, add spinach and stir, until it has soften. Add vegetable stock and coconut milk and simmer for approx. 15 min. Blend with a hand blender until the texture is completely smooth.

You can add some watercress for an extra vitamin boost together with the pine nuts.

Tip:

  • Serve with some freshly sliced Sourdough.
